Roasted Sesame Spinach
INGREDIENTS
2 bunches of English spinach, washed and trimmed
3 tablespoons Roasted Sesame Dressing
1 tablespoon toasted sesame seeds for garnish
1 teaspoon olive oil
Salt, to taste
METHOD
Bring a pot of water to a boil. Add a pinch of salt.
Blanch the spinach in the boiling water for about 1-2 minutes.
Immediately transfer the blanched spinach to a bowl of ice water to stop the cooking process and preserve its vibrant green color. After a minute, drain the spinach well.
Gently squeeze the blanched spinach in batches to remove excess water. A kitchen towel can be used remove more liquid.
Transfer to a plate and drizzle over the Roasted Sesame Dressing. Garnish with sesame seeds and olive oil.
